        플로리다 자몽 타르트<\/span>

        1.큰 볼에 밀가루, 설탕, 소금을 섞는다. 버터를 넣고 혼합물 대부분이 작은 (대략 완두콩 크기) 버터 덩어리의 거친 반죽이 될 때까지 손가락 끝 또는 페이스트리 블렌더를 이용해 섞는다. 노른자, 바닐라, 레몬 주스, 물을 섞어 반죽에 넣고 포크를 이용해 잘 섞일 때까지 젓는다. 반죽이 형성될 때까지 밀가루를 묻힌 손으로 부드럽게 반죽한다. 밀가루를 묻힌 표면에 반죽을 뒤집어가며 4 – 5번 부드럽게 반죽한다.<\/p><\/div><\/div><\/div>

        2.반죽을 공 모양으로 만든 후 납작하게 누르고 비닐 랩에 싸 최소 1시간에서 최대 2일간 냉장보관 한다. 9 – 10인치 타르트를 위한 충분한 반죽을 만든다.   <\/p><\/div><\/div><\/div>

        3.밀가루를 뿌린 바닥에 반죽을 놓고 밀가루를 뿌린 밀대로 밀어 13인치 원형을 만든 후 타르트 팬에 맞춰 넣는다 (페이스트리가 부서진 경우, 손가락으로 눌러 붙인다). 여분의 돌출부를 남기고 남은 반죽은 잘라낸 후, 돌출부를 안으로 접어서 팬의 옆쪽으로 눌러 가장자리를 보강한다. 포크로 바닥을 가볍게 찌른다. 30분 동안 냉장한다. 오븐을 190℃로 예열한다. 타르트 쉘 안쪽에 호일을 깔고 파이 웨이츠를 채운다. 오븐 중간에 넣고 10분간 구운 다음, 호일과 웨이츠를 조심스럽게 제거하고 쉘이 황금색으로 변할 때까지 13 – 15분간 더 굽는다. 쉘을 팬에서 선반으로 옮겨 식힌다.<\/p><\/div><\/div><\/div>

        4.서빙 전 필링 만들기: 날카로운 과도를 이용해 플로리다 자몽의 겉껍질과 하얀 속껍질을 모두 제거한 후, 막 사이의 과육을 떼어 키친 타월로 물기를 제거한다. 과육을 떼어낸 자몽에서 과즙 3큰술 분량을 착즙해 볼에 담는다. 마스카포네, 생강 정과, 자몽 과즙 2큰술, 정제 설탕 2큰술을 섞는다. 너무 걸쭉할 경우, 남은 자몽 주스를 혼합물에 더 넣는다. 생강 마스카포네를 타르트에 균등하게 펴 바르고 그 위를 과일로 장식한다. 남은 정제 설탕 2큰술을 뿌리고 즉시 낸다.<\/p><\/div><\/div><\/div><\/div>\n<\/body><\/html>\n","protected":false},"excerpt":{"rendered":"
