1.잘게 다진 잣을 오일 두른 작은 프라이팬에 넣고 가끔씩 저어주면서 노릇해질 때까지 볶는다. 불을 끄고 식초와 머스터드를 섞는다. 날카로운 칼을 이용해 자몽에서 껍질과 하얀 중과피를 모두 잘라내고, 막 사이에서 과육을 잘라내어 큼직하게 썰어준다. 펜넬 줄기를 다듬어 씻고 알뿌리 부분은 세로로 매우 얇게 슬라이스 한다. 슬라이스의 가운데 부분을 다듬어 버린다. 적색 치커리를 얇게 슬라이스 한다. 볼에 자몽, 펜넬, 적색 치커리를 넣고 비네그레트 드레싱으로 버무린다.<\/p><\/div><\/div><\/div>
