      1.중강불로 달군 무쇠팬에 식용유를 두르고 피밀 베이컨을 한 면당 2분씩 굽는다. 작은 냄비에 물을 넣고 식초를 첨가하여 가볍게 끓인다. 스푼을 이용해 물에 작은 소용돌이를 만들고 조심스럽게 계란을 넣어 4 – 5분 동안 데친 다음, 구멍이 뚫린 큰 스푼으로 건져낸다.  <\/p><\/div><\/div><\/div>

      2.남은 계란도 반복해 데친다. 중간 크기의 냄비에 2.5cm 높이로 물을 넣고 끓인다. 금속 볼이 물에 닿지 않도록 주의하여 위에 놓고, 볼에 버터를 넣어 녹인다. 불을 끈다.<\/p><\/div><\/div><\/div>

      3.다른 볼에 계란 노른자, 플로리다 자몽 주스와 제스트, 식초, 카옌을 섞는다. 계란 노른자 혼합물이 담긴 볼을 물이 든 냄비 위에 놓고 걸쭉해질 때까지 젓는다.<\/p><\/div><\/div><\/div>
